Grilled Spicy Eggplant

Bhaingan Ka bharta- Grilled Spicy Eggplant

Ingredients

Big Eggplant-1

Onion – 1 medium

green chilies- 3

ginger- a small piece

Tomato- 2

Curry leaves- few

Turmeric powder- 1/2 teaspoon

Corriander powder- 1 tablespoon

Jeera powder- 1 tablespoon

Red chilly powder- 1/2 teaspoon

Garam Masala- 1/2 teaspoon

Salt

Oil

water

Chopped cilantro

Step-1

Take one large Eggplant. With a knife, poke holes on all sides of the eggplant so the steam could escape when the eggplant is grilling over your stove. Make sure all sides of the eggplant are cooked well. The skin of the eggplant will start curling and ready to peel if the eggplant is cooked.

In order to cook the eggplant on your stove, poke a knife into the eggplant from one end, with the handle of the knife sticking out. So you could use that end as your grill stick to turn the eggplant on the stove so it could cook evenly.

Step-2

Take a bowl with a lid and put the grilled eggplant in the bowl and close it with the lid, so the eggplant continues to cook and later cool down. Set it aside for at least 30 minutes.

Step-3

In the meantime, chop onion, green chilies, ginger, curry leaves.

Step-4

Take a medium saucepan and add some oil. Then add all the chopped ingredients from step-3 into the pan and saute until onion is translucent and sweating.

Step-5

From Step-2 take the cooked Eggplant which is cooling and peel all the skin, with the end of the knife and cut the crown of the eggplant.

Step-6

The eggplant should be cooked so well. Use the masher to mash it down. Or you could add the eggplant into a food processor to puree.

Step-7

When the onion is cooked from Step-4, make sure to add chopped tomato. Allow the tomato to cook down, having the stove at medium flame. you could cover the pan with the lid so the process of cooking tomatoes would be faster. Using the condensation to keep the tomatoes moist and not dry quickly during the process of cooking.

Step-8

When the tomato is cooked well, add turmeric powder, coriander powder, jeera powder, red chilly powder. Follow the measurement of the ingredients. Cook the masala, by adding some water. Then add the puree of grilled Eggplant along with salt and garam masala powder to add flavor. Mix all the ingredients well.  Cook them for some more time and then add chopped cilantro.

Step-9

Enjoy hot Baingan Bharta ( Spicy grilled Eggplant) with hot chappati.
